TERROIR

WINEMAKING
The harvest is carried out at night to avoid the risk of oxidation. After harvesting, the grape bunches are destemmed to separate the berries from the stems. This is followed by gentle pneumatic pressing to softly extract the juices. Clarification is done by flotation, followed by fermentation at 16 to 18°C to enhance roundness. The wine is aged on fine lees to enrich its texture before bottling.
FOOD & WINE PAIRING
Ideal as an aperitif or with light cuisine, it pairs well with lemon sea bass fillet, chicken salad, or sautéed crunchy vegetables.
